A few months ago, Tanja Fischer called me to visit us at the winery.
When she came to us with her partner Daniel Fuchs, it quickly became clear that we speak the same language. Until recently, Tanja worked at the Horváth restaurant in Berlin. A two-star restaurant that focuses on Central Europe when it comes to wines. So Tanja had already worked with our wines there too. Her boyfriend Daniel had already cooked at the Mühltalhof in Upper Austria, among other places; his last stop was the star-rated restaurant Cordo in Berlin, where he cooked with Yannic Stockhausen.
Back in Burgenland, in Daniel's hometown of Weppersdorf, the two are in the process of taking over the Gasthaus Fuchs from Daniel's parents. The restaurant already has one star, but with the help of Tanja and Daniel we are sure that even more can be created here. Father and son are in the kitchen and Tanja is with the guests. And she does this not only highly professionally, but always with a smile on her face. We are excited to see where the journey takes them - but we will certainly be hearing a lot more from this dream team.

Tasting notes by Tanja Fischer

With its beautiful straw-yellow color, it not only flatters my eyes. It smells crisp and fresh on the nose, exactly what you want to drink on the terrace at lunchtime at 27 degrees. On the palate, there is an excellent minerality and saltiness, which immediately makes you want more. The warm limestone and loamy soil is clearly noticeable in this wine. A summer wine through and through, you don't need much, just this wine and a cool breeze. A clear perfection from Petra and Franz, their first Piwi grape variety, but you don't notice it in the taste, it could already be the hundredth.

Furmint... one of my favorite grape varieties from the start. I would recommend decanting it and pouring it into a large glass, and if it is also a little tempered, that is certainly not a bad thing. You can smell the spiciness of this wine straight away. The classic acidity is noticeable right from the start. In contrast to Weinland, you immediately notice the finesse and fullness of the wine. The honey notes are still present and the barren soil is noticeable. Perfect to enjoy in the evening, with a fish dish or chicken. Nettle spinach could be the right combination. It has a very nice, long finish. I sipped it once and I couldn't stop.

The first smell of this wine was the dark cherries, but over time it changes to peppery, spicy. The cherry fruit is more restrained in the taste, which allows the body of this wine to come to the fore. A nice, light acidity with flattering tannins. What more could you want to end the evening? The longer I smell this glass, the less I want to part with it. The warmth of the soil is definitely noticeable, which makes it all the more important to drink it cooler. I definitely recommend it at 12 degrees and not warmer! It can be drunk at any time with something grilled. But it is also a nice wine to leave the stress of everyday life behind you.
